300g - Turbinado Sugar
300g - Water
425g - Ginger (Sliced)
45g - Lemongrass (Bruised and Sliced)
10g - Lemon Rind
250g - 190 Proof Ever Clear Grain Alcohol
250g - Water
10g - Citric Acid
Pinch Salt

Method

  1. Make Turbinado sugar Simple syrup and reserve. Add all other ingredients into theMX2 and stir. Cover.

  2. Run Hardy Infusion cycle.

  3. Top with simple syrup and run cycle again.

  4. Strain through fine mesh strainer, refrigerate until ready to use.
