Garnish and Pickle Infusions

Quick Pickled Cucumbers

Ingredients:

275 grams Cucumbers, rinsed & thinly sliced, skin on

125 ml Unseasoned Rice Vinegar 125 ml Water

125 grams White Sugar

15 grams White Sesame Seeds

5 grams Kosher Salt

Final flavor profile for each chef and/or bartender are different. You may have to add or reduce time depending on your personal flavor profile to achieve the result you are looking for.

Ingredients:

1 pound Cherries, stemmed and pitted

250 grams Simple Syrup

250 grams Cognac

Process:

Measure out each ingredient separately. Combine all ingredients into the FlavorBox and cover with lid. Place FlavorBox in the MX, close MX lid. Go to Garnish infusion and press start. Once cycle is complete, transfer to a storage container and refrigerate until ready to use, up to 2 weeks.

Brandied Cherries

Process:

Measure out each ingredient separately. Combine all ingredients into the FlavorBox and cover with lid. Place FlavorBox in the MX, close MX lid. Go to Garnish infusion and press start. Once cycle is complete, transfer to a storage container and refrigerate until ready to use, indefinitely.
